Irish Bananas With Vanilla Ice Cream

irish bananasWhile the main ingredient is a relatively mundane fruit, this dessert is nothing to dismiss without a try. This Saint Patrick’s Day, celebrate in true Irish style with this whiskey infused treat. The bananas are simmered in brown sugar and Irish whiskey until tender. Then they are plated and served with a heaping scoop of cool and refreshing ice cream. Serve some Irish Coffee with the dessert and guests will revel in their Irish spirit long into the night.

Here’s what you will need for the recipe:

  1. ½ cup of butter
  2. ½ cup of packed light brown sugar
  3. ½ cup of your favorite Irish Whiskey
  4. 4 large bananas. Peel and cut in half lengthwise

Irish Bananas baking recipe:

  1. Melt your butter over medium heat in a skillet.
  2. Once the butter is melted, stir in your brown sugar and whiskey.
  3. Bring the mixture to a boil and cook until all the sugar has dissolved.
  4. Once everything has dissolved, add your bananas to the skillet and simmer gently until the bananas are tender and glazed with the syrup mixture.
  5. Serve immediately with a scoop of vanilla ice cream.

Warm, savory and delicious. What more could you want after a long day of St. Patty’s Day revelry?

St. Patty’s Pie

So I know that there are a lot of food bloggers out there and everyone has their favorites. This is one of mine. Elena is not only a ridiculously cool chic, she’s a helluva baker too. I love how she tells stories with all of her posts and they’re fantastically personal and fun to read.

I’ve featured her site Biscuits & Such on this site before but I couldn’t help but do it again. This month is huge for two reasons. One) Pi(e) day is on 3.14. I love Pi(e) day because it gives me a reason to eat lots and lots of pie. Two) St. Patrick’s day isn’t far behind! This year they actually happen in the same week. I love myself some pie and I love myself some drinking.

Thankfully Elena figured out a way to put the dessert and the booze together in one awesome pie. If you have any interest in drinking your pie or eating your stout, this is your recipe. IRISH CAR BOMB PIE!!!

I could wax on and on for hours about how delicious Bailey’s is or how brilliant putting whiskey in pie is but really, I just want you to go and eat this thing. Go ahead, I won’t judge.
