Fat Tuesday is Looming!

One of my absolute favorite holidays of the whole year is Mardi Gras. Fat Tuesday. It’s basically society saying go ahead, GORGE yourself on dessert all day long. It’s fine and dandy for this one day to eat an entire box of doughnuts without anyone looking at you askance. Okay, well, maybe that’s just me.

But there are a metric ton and a half dessert recipes that you can try out for Fat Tuesday. I know that it’s a little early but I also know that many people do their weekly grocery shopping on the weekend. So stock up on these recipe ingredients. Here are my three favorites that I’ll be making this year.

1) Mini King Cakes from King Arthur Flour – Huge king cakes are grand, but what if you could hold it in your hand? What if you could walk around without limit of plate and fork? Freedom and king cake! Brilliant. Just hide the baby in one of them and don’t tell which.

2) Mojito Pie from Biscuits and Such - This is not traditional Mardi Gras fare, but honestly how can you go wrong? This has all the elements of a great Mardi Gras celebration and IT’S A PIE! I can’t wait to try this one. It’s the only one on this list I haven’t made before.

3) Buttermilk Beignets with Chicory Custard Filling from Brave Tart - These are my tried and true absolute favorites. They are so delicious that I make up reasons to make them throughout the year. Christmas? Beignets. Fourth of July? Beignets. Birthday? Beignets. Saturday? Beignets. I’m serious when I say that anyone can make these. Just follow the recipe. It may be a longer process but oh dear custard they are so worth it.

Anti-Valentine’s Candy & Bittersweet Junk You Can Eat Or Gift

Okay, so Valentine’s Day is on its way. While there are plenty of people out there that love the holiday and relish in romance, love, and kissy-kissy-ness there are also plenty of people out there that would rather rage against the commercialism and artificial sweetness of it.

There is plenty of candy out there that feels just as neglected as you, and is probably just as sour. Sometimes what you need is a good old moment to soak in your feelings. Let that misery subside and enjoy some junk food. It’ll make you feel better than that box of chocolates he sent before the tacky break-up text message.

You know what’s just as good as the hearts that say “I love you?” The hearts that say, “Call a 900#.” Yep, they exist. They’re called Bittersweets. Pretty much any aggression you need to let out can now be said with a tart candy heart.  They’re an easy way to express how disappointed you are without having to waste air.

Another fun way to celebrate anti-Valentine’s is to give your ex some trick candy. It’s an opportunity to seek revenge for breaking your heart. try candy that changes the color of their tongue or has a sour flavor. It’s harmless fun (for you, anyway). Who could blame you?

Put Some Personality In Your Cookies!

The holidays are upon us, people! You cannot put it off any longer! The most hardcore of you bakers will have started back in October. Halloween is traditionally the day I begin my fruitcake process. But really, holiday baking swings into full gear this week. Would you like to know how I know this?

Ms. Martha is doing her 12 days of cookies celebration on the Hallmark channel! If you don’t watch it, you should. Or at least go to her website and check out her new takes on holiday favorites.

Dont’ get me wrong, I love a good chocolate chip and a tasty molasses cookie will always hit the spot, but don’t you get tired of seeing the same old holiday platter with the same old holiday cookies on them? Get creative!

Make some cookies for the office party this year that say something about you. Try going the traditional cookie route with a twist. For example, Craig Engler of the television channel Syfy was given “sharktopus” cookies from his assistant (If you don’t know what Sharktopus is, you really need to look it up.) They look like regular chocolate chip cookies in the shape of the leading monster.

Meanwhile BraveTart, one of my favorite food bloggers made some gingerbread cookies with a cookie cutter, but after she cut them out, she gave them a little personality by moving their hands and feet into different positions. Very cute!

So go with your gut, do something fun and exciting and put a little fun, spice, and personality into your holiday cookies this year!

Would Nutella Taste Good on That?

Just thinking about what to write for today’s post about Nutella is already making me salivate. Nutella newbies are always wondering what they can do with this dreamy chocolate hazelnut spread. Well for starters, anything that you typically put chocolate on will taste a billion times better with Nutella. If you’ve ever seen their commercial, the company tries to sell it as an additive to breakfast. I don’t think Nutella is a very healthy way to start the morning, but it will taste phenomenal on bread, bagels, waffles, pancakes, French toast, crepes, muffins, etc.

But we all know that sweet and salty go together better than  Kim Kardashian and Kris Humphries. Nutella and pretzels? Match made in heaven. Potato chips? Absolutely. Just don’t choose BBQ. That’s just weird. Stick with plain. Another favorite combination of mine is to make a sandwich out of Nutella and raspberry preserve. It’s like dessert for lunch. Probably isn’t very healthy at all now that I think about.

And while we’re on the topic of sandwiches, spread some peanut butter on one side with banana slices and you have pure delight for lunch. Add it to mixtures that call for chocolate, such as brownies and cakes. It will make a wonderful substitute. Everything tastes good with a little Nutella love, except meat and fish…

“Is He Okay?” “Yeah, It’s Just Sugar Shock.”

I’m an avid candy-lover. (I recently bought two 8-piece packs of mini-bars, thinking they’d last me a while. They did not.) I’m really just an overall dessert person, so frankly, if I think someone’s pushing it, they probably are.

This Is Why You’re Fat, a blog devoted to updating readers on the latest greatest fatty foods, introduced the “Candy Bar-rito” today.

Looking at it makes me feel a little queasy, despite its filling being comprised of some of my favorite candies: “Hershey’s Bar Classic, Hershey’s Bar withAlmonds, Hershey’s Cookies and Cream King, 5Th Ave., Kit-Kat, Heath Bar, and Caramello all wrapped and skillet cooked in a flour tortilla with chocolate Skittles garnish, Hershey’s Syrup. A whopping 2,000 calories.”

I think it’s the tortilla that’s bringing it down. One commenter wondered why they didn’t use something more dessert oriented, like a sopapilla or even a pancake, though I doubt that would detract from the fact that you’re basically emptying a Trick ‘r Treat bag down your throat.

Food Porn Fridays: Chocolate-Shelled Chocolate Mousse

It almost looks too pretty eat. But we’d like to put that theory to the test.

Cranberry Orange Scones Recipe

Sometimes it’s nice to nosh on a dessert with some fruits in its name — it makes indulging feel so much healthier, doesn’t it? Read on to learn how to make cranberry orange scones.

Ingredients

  • 4 eggs, beaten lightly
  • 1 egg for egg wash, beaten with water/milk (2 tbsp.)
  • 4 1/4 cups flour
  • 1 cup heavy cream, cold
  • 1 cup cranberries, dried
  • 1/2 cup + 2 tbsp. confectioners’ sugar
  • 1/4 cup sugar and extra for dusting
  • 3/4 pound cold butter, unsalted & diced
  • 2 tbsp. baking powder
  • 1 tbsp. orange zest, grated
  • 4 tsp. orange juice
  • 2 tsp. salt

Instructions

  • Heat oven to 400°F.
  • Combine 4 cups flour, 1/2 cup sugar, baking powder, orange zest, and salt in electric mixer with paddle.
  • Mix in butter on lowest speed until butter chunks are pea-sized.
  • Mix lightly beaten eggs and cream in a separate bowl, then pour into mixing bowl slowly while mixing on lowest speed.
  • Keep mixing until dough is just blended (lumpy is OK).
  • Combine 1/4 cup flour and cranberries, add to mixing bowl, and mix on lowest speed until blended.
  • Kneed dough into ball on surface dusted with flour.
  • Roll to 3/4 thick with a floured rolling pin (it’s OK to see small chunks of butter).
  • Cut dough into circular shapes with a flour cutter with plain or fluted edges. Lay cutouts on a baking pan with parchment paper on top.
  • Re-roll scraps cut more scones.
  • Apply egg wash to the tops of cutouts with a brush, then sprinkle sugar on top and cook for 20–25 minutes (wait for tops to brown).
  • Let cool for 15 min.
  • Combine orange juice and confectioners’ sugar with a whisk and drizzle on cooled scones.

S’mores Ice Cream

Strawberry Ice Cream Sandwiches

ice cream sandwichesWhen we saw these heart-shaped ice cream sandwiches on MarthaStewart.com, it wasn’t the strawberry filling that got us — it was the hearts. But whether you’re likewise as cheesy or simply into DIY-ing some strawberry goodness, these treats are sure to please!

Ingredients (for 24 sandwiches)

  • 2 1/2 pints of softened strawberry ice cream
  • 2 eggs
  • 1 1/2 sticks unsalted butter at room temp.
  • 2 3/4 cups flour
  • 1 1/2 cups sugar
  • 1/2 cup cocoa powder
  • 2 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 1/2 tsp. vanilla extract
  • 1 tbsp. milk
  • extra flour for dusting

Instructions

  • Mix cocoa powder, flour, salt, and baking flour in medium bowl.
  • In an electric mixer, cream vanilla extract, butter, and sugar. Mix in eggs and milk.
  • Add cocoa powder mix and combine on slow speed. Scrape sides of the bowl to make sure everything is mixed.
  • Shape dough into two disks, using half of the dough in each. Wrap using plastic wrap and chill for 1 hour.
  • Preheat oven to 350°F.
  • Roll dough on a surface dusted with flour using a spatula to prevent sticking.
  • When dough is 1/8 inch thick, cut with heart-shaped cookie cutters (or any shape you want!).
  • Chill cookies for 30 minutes on a baking sheet lined with parchment paper.
  • Create holes on cookies using a fork.
  • Bake 12-15 minutes, until firm. Once the cookies are cool, move them to a wire rack with half of the undersides facing up.
  • Spread 1/2-inch layer of ice cream on underside-up cookies, then create sandwiches using the other cookies.
  • Harden in freezer.

These sandwiches will last for 3-4 days in the freezer when stored in an airtight container. Enjoy!
